SUBSTANCE: invention relates to an oil or fat composition for deep frying, comprising (I) a fractionated oil or fat based on palm oil, in which the tripalmitin content relative to the triglyceride content is 70-90 wt %, the content of unsaturated fatty acids relative to the total content of all of fatty acids is 1-8 wt %, and the tripalmitin content relative to the content of the trisaturated triglyceride of fatty acids is 84-95 wt %, and (II) a base oil with a melting point of less than 10°C, the content of the component (I) relative to the total weight of the oil or fat composition is 0.05-15 wt %, and the content of the component (II) relative to the total weight of the oil or fat composition is 85-99.95 wt %.
EFFECT: fundamentally new oil or fat composition with thermal stability is claimed.
