FIELD: food industry.
SUBSTANCE: invention relates to food industry. Palm oil based fractioned oil and fat has the weight ratio of tripalmitine to triglyceride equal to 70-90%, non-saturated fatty acids accounting for 1-8 wt % of the total fatty acids content. The oil and fat includes a solid part produced by way of crystallisation of palm superstearine with iodine value equal to 10-17 so that the suspension solid fat content is no more than 20% and the suspension fractioning for the solid phase yield to be no more than 26 wt %. Fractioning is preferably performed so that the numeric value of the ratio of solid part yield to the suspension solid fat content is no more than 10.
EFFECT: invention enables production of a composition of oils or fats having enhanced usability and processibility to the extent of sugar dissolution, adhesive ability and fried doughnut texture, shortening filling condition and hardness as well as chocolate glaze hardening time due to excellent crystallisation intensification effect.
