FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to meat storage methods by coating with biodegradable protective layer. Method comprises application of film-forming composition on meat surface and subsequent fixation of coating, in which the base of the film-forming composition used is sodium alginate solution with concentration of 1-2% while continuously stirring, wherein sodium alginate powder is added directly into a funnel formed by stirring water at temperature of 20°C at speed of 120 rpm using a stirrer, then obtained gel is cooled to temperature of 0±2°C, and coating is carried out at temperature of composition 0±2°C by immersion method, solution excess is allowed to drain, wherein the alginate film is formed in the presence of Ca+2 ions when applying calcium chloride by spraying by a biochemical reaction between sodium alginate and calcium chloride.
EFFECT: obtaining environmentally safe biodegradable edible film coating with longer product storage life, reduced product shrinkage during storage, elimination of microbiological spoilage as the composition has antiseptic action.
