FIELD: food industry.
SUBSTANCE: invention relates to food industry and is intended for storage of food products, in particular, fresh cooled pork meat in order to increase storage life and preserve its quality. Fresh pork chilled meat storage method includes application onto its surface of water-containing protective multicomponent composition in liquid form with subsequent packaging thereof into a film material, made by way of preliminary addition and dissolution in a similar liquid composition of polyvinyl alcohol with subsequent reduction in obtained composition of water by evaporation to form a cured film material with formation in it during hardening of structural clusters based on polyvinyl alcohol and components of liquid composition, with subsequent arrangement and storage of packaged meat in a constant magnetic field (CMF) with induction from 0.3 to 2.4 T, and exposure to magnetic field is carried out with direction of magnetic field lines across pork meat fibers.
EFFECT: method allows to significantly increase storage life of fresh cooled pork meat preserving its quality.
