FIELD: food industry.
SUBSTANCE: composition for preparing a food in the form of a beverage comprises a foaming ingredient releasing gas after dissolution in a water-containing liquid, and a beverage ingredient containing particles of a ground vegetable material in a matrix containing a vegetable extract. Wherein the beverage ingredient has a delayed solubility, so that foam is formed by the foaming ingredient before the beverage ingredient dissolves while dissolving the composition in the water-containing liquid. A method for preparing the beverage comprises providing the composition for preparing the beverage and dissolving said composition in a water-containing liquid.
EFFECT: obtaining a beverage with improved flavour and good volume of foam, in which there are no visible particles of roasted ground coffee, that is, the particles do not get stuck in the foam.
