FIELD: food industry.
SUBSTANCE: invention relates to the coffee industry. To produce a powdered coffee beverage, the method is implemented as follows. Performing aromatic substance distillation from fried and ground coffee beans and/or coffee extract with the help of gas and/or steam. Performing extraction of fried and ground coffee beans with the help of an aqueous liquid to produce an aqueous coffee extract. Preparing an aqueous composition containing, in terms of dry substance weight, at least 5 % of coffee dry substance extracted at the previous stage, and in terms of dry substance weight of at least 5 % of compounds obtained not from coffee and selected from fat and protein. Coffee aroma substance obtained at the distillation step is added to the obtained aqueous composition. Aqueous composition is dried.
EFFECT: invention ensures coffee aroma substance stability (prevention of undesirable after-taste, avoiding aromatic component decomposition) and intensified aroma release in the product.
