FIELD: food processing industry, in particular instant dry coffee beverage capable to produce coffee beverage having foam on its surface after water addition.
SUBSTANCE: claimed coffee beverage comprises soluble gas-containing base, including solid particles of instant coffee and soluble filler in amount of 35 % (calculated as mass of base dry matter). Soluble filler is capable to enhance volume of gas-including instant dry coffee beverage. It was discovered, that most preferable filler is olygofructose that has good solubility and positive influence on obtained coffee beverage taste. Also invention relates to instant dry coffee beverage capable to produce black coffee with foam and method for production thereof.
EFFECT: espresso-like coffee beverage.
