FIELD: food industry.
SUBSTANCE: invention relates to a method for expanding a product containing starch, and comprises the following stages: exposing the product to a hot process gas flowing in the downstream direction. The product is expanded by means of a thermal shock when the product is transported in the process gas in the downstream direction; and reducing the temperature of the process gas by injecting a cooling medium during further transportation of the product in the process gas. According to the invention, the process gas temperature is reduced by injecting a cooling medium in at least two places downstream, so that temperature gradient may be obtained in the process gas in the downstream direction.
EFFECT: ensuring effective expansion of the product, while reducing or completely eliminating undesirable effects on the taste or quality of the product.
