FIELD: food industry.
SUBSTANCE: fermented milk product contains a fermented milk composition and microcapsules of an oxidizable active substance, the shell of which consists of an encapsulating composition containing alginate and ascorbyl palmitate. The oxidizable active substance is chosen from a group comprising vitamin C, vitamin B5, vitamin B6, vitamin B8, vitamin B9, vitamin A, vitamin D3, vitamin K, and vitamin E, or a mixture thereof. The method of preparing the fermented milk product includes a step of dispersing the microcapsules of the oxidizable active substance, the shell of which consists of an encapsulating composition containing alginate and ascorbyl palmitate, in the fermented milk composition.
EFFECT: increasing stability and preventing premature oxidation of the oxidizable active substance being a part of the fermented milk product.
