FIELD: food industry.

SUBSTANCE: invention relates to dairy industry, in particular, to production of expressed fermented dairy products. Method provides for heat treatment of dairy material containing lactose, fermentation with at least one strain of lactic acid bacteria, having weak ability to metabolize lactose in acid whey, separation, obtaining the expressed fermented milk product and by-product acidic whey containing lactose. Method may include homogenisation of a fermented milk product and at least one cooling stage. Disclosed is also a fermented product produced by this method.

EFFECT: inventions provide improved scoring of aroma completeness, absence of enhanced taste or aroma and absence of excess notes of product after storage for 55 days.
