SUBSTANCE: group of inventions relates to dairy industry. Strain Lactobacillus rhamnosus, deposited in CNCM under number 1-4993, suitable for use in a dairy product, including in a fermented milk product. Also disclosed is a composition of a milk product containing at least 105 CFU/g of Lactobacillus rhamnosus strain, deposited in CNCM under number 1-4993; method for production of fermented milk product, as well as application of this strain in production of milk product.
EFFECT: group of inventions provides exceptional organoleptic characteristics of milk products by using a strain of Lactobacillus rhamnosus having the ability to secrete at least 250 ppm of acetoin and at least 20 ppm of diacetyl.
