FIELD: food industry.
SUBSTANCE: invention refers to the canning industry and can be used during the production of cooked corn in vacuum packaging. Method involves cleaning cobs from cover leaves, pedicels, silky threads, washing with the removal of the remains of coverslips and silky threads. Corn cobs are inspected and blanched for 4-5 minutes. Corn cobs are packed in bags, sealed in the vacuum packaging machine, followed by sterilization in the autoclave at the temperature of 120°C at the pressure of 2.0 atm in the (min) 20-40-20 mode.
EFFECT: invention allows to preserve the freshness and all the taste qualities of the product for 18 months at the temperatures up to + 250°C.
