FIELD: food industry.
SUBSTANCE: method for manufacturing a food product based on Jerusalem artichoke is proposed, which includes inspection, washing, cleaning, rinsing, grinding into pieces from 3 to 5 mm and combining Jerusalem artichoke tubers, carrots and/or beets, and onions. Preparing the flavouring components in the form of table salt and granulated sugar, combining the prepared vegetables and the flavouring components, with the subsequent packaging, sealing and heat treatment. After combining, the mixture of Jerusalem artichoke tubers, carrots and/or beets and onions is held in the solution of natural antiseptics, followed by the solution removal, and after sealing, heat treatment is performed using sous vide technology until the product is completely ready.
EFFECT: improving the properties and taste of the product.
