FIELD: food industry.
SUBSTANCE: invention relates to dairy industry and is intended to quantify the palm fat content in spread with butter fat. To do this, emulsion of the spread is obtained by dissolving the sample weighed in an organic solvent, followed by measuring the distribution function of the dimensions of the colloidal particles by the laser radiation of dynamic scattering. Quantitative content of palm fat is determined by the formula: Cpalm = (A1 / A2 - 0.55) / 0.021, where A1 – the area under the peak, determined by the size distribution of the emulsion droplets for R1, corresponding to the interval 100–250 nm, and A2 – the area under the peak, determined by the size distribution of the emulsion droplets for R2, corresponding to an interval of 400–1,000 nm.
EFFECT: quantitative determination of the palm fat content in the spread with butter fat.
