SUBSTANCE: disclosed is a method for determining palm oil in dairy products by recording an image using a luminoscope, with subsequent measurement of the color index of the blue luminescence of the analyzed sample, according to the invention, an analyzed sample with a layer thickness of not less than 0.5 cm is placed on the test strip, frozen to a solid state, placed in an inspection chamber of a luminoscope and irradiated with ultraviolet light, after which the image is recorded by a camera built into the luminoscope, based on the obtained data, the palm oil content is calculated by the formula: , where Cpalm is the palm oil content, %, FB is the measured color index of blue, wherein the measured color index of blue (FB) is less than 108.73 indicates the absence of palm oil.

EFFECT: invention increases accuracy of determining the presence of palm fat in dairy products and reduces the duration of the method.
