FIELD: fat and oil industry.

SUBSTANCE: invention relates to the fat and oil industry. A method for determining the content of palm oil in a spread with butter fat, consists in forming an emulsion of the said spread with a mass concentration of 5±1% in 96% ethyl alcohol at a temperature of 40±5°C; mixing of the formed emulsion is ensured; the resulting mixture is processed with ultrasound with a power of 30±10 W in a water bath for 50-60 s; the ultrasound-treated mixture is mixed with a rotating blade at a speed of 100±10 rpm for 30±10 s; the above-mentioned ultrasound treatment of the mixture is repeated; the mixed mixture is diluted tenfold by volume in a dust-free dish with 96% ethyl alcohol with the addition of 2.5±0.5% water; the formed emulsion is illuminated with a laser with a radiation wavelength in the range of 630-700 nm; based on the dynamic light scattering method, the radii rp of particles in the formed emulsion in an alcohol-water mixture are measured as the average colloidal radius for 3-5 measurements particles in nanometers; the content of palm fat Cpalm (%) in the spread is determined according to the expression:

EFFECT: invention makes it possible to increase the accuracy of quantitative determination of the content of palm and butter fat in the spread.
