FIELD: oil and fat industry.
SUBSTANCE: method for visual assessment of the presence of vegetable antioxidants in the composition of edible animal fat products consists in preparing a solution of 2,2-diphenyl-1-picrylhydrazyl (DPPH) in 70% ethanol with a concentration of 10-4 to 10-5 M, heating the resulting alcoholic solution of DPPH to temperature of 60°C, introducing an animal fat sample into the DPPH solution, dissolving the fat, centrifuging and decontaminating under normal environmental conditions, followed by a visual assessment of the colour of the solution: in the absence of plant antioxidants in the animal fat sample, the DPPH solution remains of nautical purple colour and does not change colour, in the case of the presence of antioxidants the colour intensity of the solution decreases or the DPPH solution becomes completely discoloured, depending on the amount of antioxidants present in the animal fat sample being studied.
EFFECT: invention allows simplifying the analysis procedure in comparison with available methods, reducing the duration and cost of the method for identifying the presence of plant antioxidants in edible animal fat products.
