FIELD: food industry.
SUBSTANCE: invention is intended for use in the meat industry for the production of shashlik. Method of preparation of marinade for shashlik involves the preparation of the mixture of traditional spices and/or kitchen herbs and the aqueous solution of coniferous chlorophyll-carotene paste in the concentration from 0.1 up to 0.25 %. In the resulting marinade, the meat is placed for 30–40 minutes.
EFFECT: shashlik is obtained, which has the taste and aroma that is characteristic of meat of wild animals.
