FIELD: food industry.
SUBSTANCE: group of inventions refers to the field of production of products from a test shell with stuffing, such as pelmeni, vareniki and others, as well as to the field of manufacturing machines for the production of such products. Method of making dough products with a filling on basket-type machines provides for feeding more than two dough sheet into the molding area, as well as filling, casting dough sheets with the help of forming drums, dividing the products into separate semi-finished products and separating the products from the basket. Dough sheets and filling in the molding area are fed in such a way that the filling touches only two main dough sheets – so that it is enclosed between two dough sheets, for which at least a couple of dough sheets, one of which – additional – does not come into contact with the filling, is connected to each other either directly or through an expendable material whose layer thickness between sheets is more than 4 times less than the total thickness of said pair of sheets, such connection is carried out outside the point of entry onto the dough sheets of the filling, excluding contact with the last one of the same dough sheets, thus providing the possibility that, at least on one side of the products, the test sheet is composed of at least two fragments of two different test sheets overlapping each other.
EFFECT: it provides thickness increase of the test sheet of pelmeni, vareniki and other without reducing its consumer and production quality characteristics, improving the reliability of preserving the integrity of the test sheet during freezing, storage and final culinary processing of products, reducing the loss of moisture filling in the process of freezing and storing products.
