FIELD: food industry.

SUBSTANCE: invention relates to the food industry, in particular to the improvement of the quality of foaming agents. Present invention relates to a process for producing a foaming agent comprising the steps of: (i) providing a composition comprising at least two 4-vinylcatechol monomers derived from chlorogenic acid; (ii) promoting the polymerization of 4-vinylcatechol monomers from step (i) by heat treatment to obtain a composition containing polyfunctional phenols. Further, the foaming agent obtained is used as a foaming agent for coffee, which can be added both to the coffee extract, as well as to the ground coffee.

EFFECT: improving the quality of foaming agents.
