FIELD: coffee industry.
SUBSTANCE: invention relates to the coffee industry. Extract the fried and ground coffee beans with water at a temperature of 80 °C or less to obtain the first extract and the extracted coffee grounds. Process the extracted coffee grounds by adding water to it. Steam explosion of the extracted coffee grounds is carried out at a temperature of 50 °C to 170 °C at a pressure of 0.1 to 10 bar (from 104 to 106 Pa) for a period of 0.1 to 5 hours. Separate the mixture into an intermediate extract and processed extracted coffee grounds. Add water to the resulting water to form an aqueous suspension. Aqueous suspension is hydrolyzed by the hydrolyzing enzyme to produce a second extract and a waste residue. First and the intermediate extract are added to the second extract, optionally after concentration and/or drying of the intermediate and/or second extract, to obtain a combined extract. Dry the combined extract to obtain a soluble coffee product.
EFFECT: invention provides a product with a high solids yield of 65 % or more.
