SUBSTANCE: invention relates to fat and oil industry. Method for producing melted oil and oil cake includes drying the seeds, cleaning seeds from weeds, shelling by a single stroke method, separation from the russet on the screen surface and in the vertical air flow of the free fruit shell, grinding of the core fraction, wet-heat treatment of crumb, pre-pressing to obtain oil and oil cake, crushing cake, final pressing of the oil from the pre-press oil cake and primary oil purification, while the melon seeds are subjected to infrared radiation before bringing them down, bringing them to a moisture content of 4–5 %.

EFFECT: invention makes it possible to increase the shelling rate of melon seeds, id est to reduce the content of whole seeds in the resulting rush, after melon seed shelling and, accordingly, increase the content of the free fruit shell in it, which makes it possible to separate it to a greater extent on the screen surface and in the vertical air flow, and also the quality of the resulting products improves.
