SUBSTANCE: bakery oven contains tunnel baking chamber with several thermal zones, including wetting zone with steam distributing pipes placed inside it and recirculation heating system, which includes double-chamber furnace arrangement with lens temperature compensator, as well as distributor of job mix of combustion products. Distributor of job mix is connected to main and additional gas approach. Additional gas approach is connected to heat-transfer passages of the first thermal zone, main one to heat-transfer passages of remaining thermal zones, starting from the third one. Distributor of job mix of combustion products is located outside the size of the length of the first thermal zone. Length of wetting zone and the length of additional gas approach are interrelated and proportional to the length of tunnel baking chamber.

EFFECT: invention provides improved quality of a wide range of bakery products.
