FIELD: food industry.
SUBSTANCE: invention relates to food products, namely to a group of dried products, in particular to meat chips. Crispy meat chips consist of ready-to-eat meats and are made by combining the temperature and moisture removal processing of blanks from chilled meat raw materials. Finished chips are plates in the size of 29 mm to 82 mm, at a thickness of 0.8 mm to 2.6 mm, with the following structure of the meat composition: fat 4–6 %, muscle tissue 28–32 %, connective tissue 13–15 %, cartilaginous tissue 4–6 %, at a moisture content of 6–14 %, while having a hardness of 455 kPa to 1108 kPa and a brittleness of 0.32 kgf/mm2 up to 0.98 kgf/mm2.
EFFECT: provides increased reliability of maintaining the original form of the product in the packaging during transport, as well as the expansion of consumer properties, in particular, the increase in crunch when eating the product.
