FIELD: food industry.
SUBSTANCE: group of inventions relates to the food industry, in particular to a method and a device for production of meat analogue. Method comprises a) feeding a meat suspension which contains protein into a first heating unit and heating the meat suspension to a temperature higher than the protein denaturation temperature in the meat suspension but lower than the protein melting point to produce a first heat treated product, b) moving the first product into a second heating unit and heating the first product to a temperature higher than the melting point of the protein to produce a second heat-treated product, c) cooling of the second product by passing through the cooling unit and separation of the cooled second product into pieces.
EFFECT: use of group of inventions improves quality of ready product.
