SUBSTANCE: meat chips are characterized by the fact that they are a ready-to-eat product, they are thin, dried, brittle, slices, crispy when broken, each of which is obtained from the ingredients presented in the ratio, in wt.%: meat 63.355-63.5, water 23.355-23.5, pork meal 5.06-5.1, animal protein 2.36-2.4, food salt 1.25-1.3, nitrite salt 0.45-0.5, vegetable oil 0.005-0.015, phosphates 0.07-0.08, spices and food additives 3.74-3.75. To obtain a ready-to-eat product: meat is trimmed, minced meat is prepared from this meat, a protein stabilizer is prepared by emulsifying pork meal 5.06-5.1 wt.%, where water is used 4.955-5.0 wt.%, edible salt 0.2-0.25 wt.%, vegetable oil 0.005-0.015 wt.%; phosphates 0.07-0.08 wt.%, final temperature 12°C and subsequent cooling to 4-8°C, animal protein 2.36-2.4 wt.%, spices 3.24-3.25 wt.%, food salt 1.0-1.05 wt.%, nitrite salt 0 45-0.5 wt.%, water 18.4-18.5 wt.%, the protein stabilizer, animal protein, salt, spices, water are mixed until a homogeneous mass is obtained, minced meat is added to the resulting homogeneous mass, the homogeneous mass with minced meat is mixed until compacted, until air bubbles are excluded, a semi-finished product is obtained by moulding the prepared mass through an impermeable shell, the semi-finished product is heat treated by boiling, the semi-finished product is cooled after cooking is completed, the semi-finished product is frozen, the shell is removed from the semi-finished product, the semi-finished product is cut into slices, dried, after drying the slices are sprinkled by powder from a mixture of spices and food additives 0.49-0.5 wt.%, containing spices and ground vegetables, salt, flavour and aroma enhancer, flavourings, sugar, dextrose, antioxidant.

EFFECT: invention allows expanding the range of food products by making a ready-to-eat product with specified characteristics, increasing the salt content, and also reducing the protein content in the finished product.
