SUBSTANCE: invention relates to the non-alcoholic industry and concerns the preparation of a sbiten concentrate – a native Russian drink, also used as a prophylactic, tonic and generally restorative agent. Method of preparing a sbiten concentrate is characterised by that honey is preheated to 70 °C, cooled to 40 °C and allowed to stand in a sealed container at a temperature of 40 °C. Mixture of spices prepared and ground in advance is added, the resulting composition is steeped for 24 to 76 hours at a temperature of 30 °C in a closed container, mixed with extracts of herbs, roots, berries, peels and fir-needles with a moisture content of 50–70 % obtained during extraction under vacuum, filtered, the moisture content of the obtained concentrate is measured and the final moisture of the product is adjusted to 20–30 % by diluting it with water remaining after extraction.

EFFECT: invention provides a sbiten concentrate with higher content of biologically active and aromatic substances and which is more storage-stable without the formation of a crystalline hydrate structure.
