SUBSTANCE: invention relates to food industry. Additive contains citric acid, as well as the reaction product of a natural component with a solution of electroactivated water (anolyte), propylene glycol and glycerin, in which the ratio of propylene glycol to glycerin is 3:1. As a component of natural origin, CO2 extract of plant raw materials, including a) grapefruit; b) rosemary.
EFFECT: invention makes it possible to obtain an additive that has an enhanced ability to preserve the freshness of meat products by improving its antimicrobial and antioxidant properties.
