SUBSTANCE: group of inventions relates to poultry-processing industry. Apparatus for evacuating a bird carcass suspended from legs comprises a gutting device configured to move up and down, as well as into and out of the body of the bird. Device comprises two halves of the holder, which are connected to each other by a hinge in the lower extremity of the device. Two halves have cooperating clamping surfaces adjacent to said hinge for clamping a portion of the bird's entrails when said two halves of the holder move towards each other from an open position to a closed position. Two halves have curvilinear parts designed to form the window by two halves when they are in one of the positions, open or closed. Curved portions are designed in such a way that said window is formed in close proximity to the clamping surfaces when these two halves of the holder are in the closed position, whereas the window in the immediate vicinity of the clamping surfaces is substantially closed or missing when the two halves are in the open position.

EFFECT: device for evisceration and a method for evisceration of a suspended bird are provided.
