FIELD: meat processing industry.

SUBSTANCE: device for evisceration of a bird suspended from its legs includes a device for evisceration, which is adapted to move up and down, as well as into the cavity of the body of the bird and from it. Evisceration device contains two halves for holding, which are connected to each other by means of a hinge on the bottom edge of the device. Holding halves have cooperating clamping surfaces located adjacent to said hinge for clamping part of the bird's insides, when the two halves for holding move towards each other from the open position to the closed position. Evisceration device comprises a support holder located next to the two halves for holding, this support holder being capable of moving up and down, as well as inside and outside of the cavity of the bird corpus simultaneously and synchronously with the two halves for holding. Support holder is also designed to move towards the two halves for holding and in the opposite direction, and the support holder is arranged to occupy a position between the two halves for holding. By means of the device the method of evisceration is realized.

EFFECT: invention provides for evisceration of the bird carcass.
