Dairy dessert contains the following as initial components, wt%: cheesy or curd whey 62.0–69.0; whole milk powder 10.0–15.0; granulated sugar 6.0–8.0; soluble chicory 0.9–2.1; dried Jerusalem artichoke powder 3.0–5.0; textured barley flour 3.0–5.0 at its ratio to the Jerusalem artichoke powder of 1:1 and to soluble chicory from 1:0.3 to 1:0.42, citric acid 0.05–0.075; ascorbic acid 0.01–0.03; flavouring 0.01–0.05 and water – the balance.

EFFECT: invention is aimed at obtaining a product with higher nutritional and biological value, improvement of its preventive properties, providing an increase in antioxidant protection of the body, improving peripheral blood properties – lowering the level of cholesterol and triglycerides.
