SUBSTANCE: invention relates to fat and oil industry. Mayonnaise, which includes vegetable oil, mustard, salt, sugar, acetic acid 70 %, egg yolk, soda food and water. In this case, vegetable stabilizer is added to mayonnaise with sodium alginate and sweet pepper powder is introduced. Mayonnaise, obtained with the following ratio of components, mass%: vegetable oil – 26.13; sodium alginate – 26.13; water – 22.66; 70 % acetic acid – 10.45; egg yolk – 6.62; baking soda – 4.36; mustard – 1.72; granulated sugar – 1.39; table salt – 0.52; bayberry powder – 0.02.
EFFECT: invention makes it possible to expand the range of emulsion-type sauces, improve organoleptic performance by eliminating the use of preservatives, the resulting sauce does not separate, reduces the level of cholesterol in the blood.
