FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. Method for production of ideal whey protein concentrate includes production of ideal whey protein solution containing both milk whey proteins, and caseins, pH adjustment of the solution and further thermal treatment with optional cooling and storage. Also described is the product obtained by this method, and use of said concentrate in methods of producing fermented milk products.
EFFECT: invention enables to obtain a product with a viscous thick structure with high content of whey protein and low content of total protein.
