FIELD: biotechnology.
SUBSTANCE: group of inventions relates to fermented milk industry and biotechnology. Milk is microfiltered to produce a milk solution in the form of a microfiltration permeate and an ideal solution of whey protein. Milk solution is pasteurized at a temperature of about 80 °C to about 95 °C for about 5 to about 15 minutes. Solution is cooled, a coagulant is added to the mixture and maturation is performed to produce an acidified milk base. Milk solution is not subject to reduction of calcium content. Acidified milk base is used to produce an acidified milk product such as curd, fresh cheese, vili and yoghurt. To produce the acidified milk product, the method is implemented as follows. Acidified milk base is obtained, filtered on a sieve and separated to produce an acidified milk product. Method of yoghurt production is as follows. One obtains acidified milk base and stirs the base.
EFFECT: group of inventions enables to obtain a product with a soft smooth texture, improved rheological properties of the product, high output of the acidified milk product.
