FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely to the production of modified protein products. Modification of non-starch polysaccharides and a protein complex of triticale flour is carried out by enzymatic hydrolysis with cellulolytic and proteolytic enzyme preparations followed by its stopping. Before the enzymatic hydrolysis, the ground raw material is mixed with water. Hydrolysis is carried out under optimal conditions for the action of enzymes and saturating substrate concentrations, the hydrolysis is stopped by heating the suspension followed by separation of the resulting suspension into a solid residue and a liquid fraction of the biomodified product.
EFFECT: invention makes it possible to process raw materials with a high content of peripheral parts, with an increased yield of the product, as well as depth and degree of hydrolysis, high biological value and certain functional and technological properties.
