FIELD: alcohol industry.
SUBSTANCE: invention relates to alcohol industry. Method of processing grain material to obtain ethanol, protein product and gluten is characterised by that of grain raw material is separated bran and wheat flour is produced, mixed with water at ratio of 1.5:1 and introduced enzyme preparation "Viskolaza 150 HP" in dose of 0.01 % to mass of grain, then kneading is subjected to homogenisation, then suspension is fed into hydraulic cyclone, where it is separated into two streams: first flow contains A-starch and food fibres, second flow contains gluten, B-starch, pentosans and soluble proteins, A-starch is washed, gluten and B-starch separated with simultaneous washing, recovered gluten is taken for drying, A-starch is connected to B-starch, obtained mixture is boiled and saccharified, wort is fermented, from mature brew yeast are separated, mixed with offal, dried, granulated and used as additive to fodders, yeast-free brew is directed to production of alcohol, distillery dreg is used as fertiliser.
EFFECT: method allows to produce additionally dry gluten with protein content of not less than 75 %, as well as protein enriched protein additive, intensify fermentation process, preserve normative indices at output of alcohol, arranging non-waste production.
