FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely to the production of modified protein products. Modification of non-starch polysaccharides and a protein complex of raw materials is carried out by enzymatic hydrolysis with cellulolytic and proteolytic enzyme preparations followed by its stopping. Before the enzymatic hydrolysis, the ground raw material is mixed with water. Hydrolysis is carried out at optimal dosages of enzyme preparations and saturating substrate concentrations. Hydrolysis is stopped by heating the suspension, followed by separation of the resulting suspension into a solid residue and a liquid fraction of the biomodified product.
EFFECT: invention makes it possible to obtain a product possessing characteristic functional and technological properties, increased biological value and to increase its yield.
