FIELD: food industry.
SUBSTANCE: invention relates to food industry. Method of making bread includes kneading dough from wheat flour of the first or higher grade and flax flour, pressed yeast in the form of a suspension, salt, water and other ingredients prescribed by the recipe, its fermentation, cutting, proofing of billets and their baking. When kneading the dough, flax flour is used in flax seed flour, that is premixed in 1:1 ratio with buckwheat flour, and the flour component is prepared by mixing the resulting mixture with a first or higher grade wheat flour. Total amount of flour mixture from flax seeds and buckwheat is 30 % to the weight of wheat flour. In addition, when kneading in the dough, add up to 2.0 % of honey, and as a dietary salt is used sea salt.
EFFECT: invention makes it possible to improve the indices of food and biological value of finished products while maintaining high consumer properties, organoleptic and physico-chemical indicators of bread.
