FIELD: food industry.
SUBSTANCE: invention relates to the production of chewing gum. Disclosed chewing gum comprises a chewing mass and a coating. Chewing mass contains at least one gum base and at least one sugar and/or at least one sugar substitute. Coating contains at least one sugar and/or at least one sugar substitute, at least one sweetener, and water. Chewing mass is at least partially surrounded by a hard caramel layer, which is compliant when bitten. Hard caramel layer comprises 50 to 95 wt% of at least one sugar substitute, 0.001 to 5 wt% of at least one gelling agent, 0.001 to 5 wt% of at least one flavourant, at least one vitamin, at least one trace element, at least one other mineral substance, at least one dentifrice or mixtures thereof, optionally at least one acid, optionally at least one sweetener and water up to 100 wt%. Preferably, the hard caramel layer does not contain sugar. Residual moisture of the hard caramel layer is in the range of 5 to 10 wt%. Coating is applied to the hard caramel layer in such a way that the chewing mass and the hard caramel layer are completely surrounded by the coating. As a result, the residual moisture is maintained in the hard caramel layer, and said layer does not harden subsequently. Coating comprises 50 to 99 wt% of at least one sugar substitute, 0.001 to 5 wt% of at least one gelling agent, 0 to 2 wt% of a colourant, 0.001 to 0.3 wt% of at least one sweetener, 0 to 5 wt% of at least one flavourant, optionally at least one gloss agent and optionally at least one release agent and residual water up to 100 wt%.
EFFECT: invention makes it possible to obtain a chewing gum with a uniform release of flavour due to the multilayer structure, but with typical properties during chewing and consistency familiar to the consumer.
