FIELD: dairy industry.
SUBSTANCE: method involves the restoration of skimmed milk powder and soy protein powder isolate, normalization by adding dehydrated melted milk fat, homogenizing and adding sweetener, which is sugar, stevioside and viburnum syrup. Resulting mixture is pasteurized, cooled, seeded in the form of fine crystalline lactose, crystallized, and cooled. Product is prepared with the stated choice of components, kg per 1000 kg of the finished product, excluding losses.
EFFECT: invention allows to obtain a product of high storage stability, good microbiological indicators, high biological and nutritional value.
