FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. Method for production of concentrated milk product with sugar envisages reduction of dry defatted milk at temperature of 40–45 °C in water and nanofiltration concentrate pre-pasteurized at 74 ± 3 °C and normalization by adding dehydrated molten milk fat. Then one performs homogenisation, sugar introduction, produced mixture pasteurisation, cooling, seeding in the form of fine-crystalline lactose, crystallisation and after-cooling of the ready product. Components are used in the declared amount.
EFFECT: invention allows to manufacture a product with improved organoleptic indices, as well as enhance its biological and nutritive value.
