FIELD: food industry.
SUBSTANCE: group of inventions refers to the food industry, namely, to the production of a quick-cooking meat product. Roasted dry processed instant meat product includes 7.4 to 30 wt. % gelatinized starch relative to the weight of the fried dry cooked instant meat product. Method includes preparing the material for the processed instant meat product, pregelatinized starch and water, mixing them, molding the mixed product, roasting it and drying it.
EFFECT: prepared instant meat product has excellent recovery properties in hot water and low cost.
