FIELD: food industry.
SUBSTANCE: use: for vacuum freeze drying food products, bioorganic and inorganic materials in domestic and laboratory conditions, at small food, chemical, and pharmaceutical enterprises. As a cooling and freezing device, a freezer of a household two-compartment refrigerator or a freezer with an unchanged refrigeration system is used. Cameras of a sublimator and desublimator are made with the possibility of their placement in the freezer. Automatic control unit for a drying process is located on the outside of a refrigerator or freezer body and provides process control at all stages of drying by monitoring total gas pressure in sublimate, the temperature of the working shelves and the partial pressure of water vapor. Drying step can be carried out at external room temperature with placement of a sublimation chamber outside a freezing chamber.
EFFECT: technical result: expansion of functional capabilities of household refrigerators and freezers without changing their technical and functional parameters, associated with food storage, improving the management and control of a drying process, reducing energy consumption for drying.
