SUBSTANCE: group of inventions relates to the field of freeze-drying a food, pharmacological, or cosmetic product. Proposed is a method for freeze-drying a product, including the stages of bringing the water in the product to a solid aggregate state, reducing the residual pressure in a vacuum chamber to a total pressure of 3 to 4 mmHg below the triple point of water, maintaining the rate of distillation of water from the product. In the process of distillation, non-condensable gas is supplied until such value of total residual pressure in the vacuum chamber is achieved whereat the partial pressure of water vapour does not exceed the triple point pressure. Also proposed is a system for freeze-drying products, containing a vacuum chamber, a system for cooling and heating the product, a vacuum pumping system applying at least one Roots pump and at least one forepump.

EFFECT: possibility of quickly removing a large amount of moisture from a product and producing lyophilisates of a high and stable quality with the reduced capital, operational, and energy costs.
