FIELD: chemistry.
SUBSTANCE: invention relates to a method of preparing starch. Disclosed method comprises mixing water, non-pregelatinised starch and an acid having pKa value from 3 to 6, which does not substantially form chelates with calcium ions, to obtain a wet starch-containing precursor substance with a moisture content of 8 wt% to 25 wt%, feeding said wet starch precursor substance to an extruder, pregelatinisation and acid modification of said wet starch in the extruder at a head temperature of 150 °C to 210 °C, wherein the pregelatinised, partially hydrolysed starch is characterised by a degree of gelatinization of at least 70 % and a viscosity in cold water (10 % solids, 25 °C) of 10 Brabender units (BU) to 120 BU.
EFFECT: invention provides an easily digestible starch.
