FIELD: food industry.
SUBSTANCE: group of inventions relates to coffee industry. Instant coffee is produced as follows. Fine roasted coffee material is prepared. Aqueous coffee extract is prepared. Said roasted coffee material is finely ground with said aqueous coffee extract to obtain a first mixture and heated to a temperature of 70 to 100 °C in an aqueous medium for a period of from 1 minute to 3 hours. Spray drying is carried out, where the first mixture contains from 5 to 25 % of the roasted coffee material, said roasted fine coffee has a D50 value of 1 to 40 microns. Method of preparing the coffee beverage comprises the step of contacting the instant coffee with the aqueous medium.
EFFECT: group of inventions provides a product with organoleptic properties of roasted ground coffee, which when brewed provides a lighter drink without staining the foam.
