SUBSTANCE: invention relates to the food industry. Method for preparing the dough includes the steps of mixing water, flour, yeast suspension, salt and drinking water, fermenting dough, cutting, proofing and baking dough pieces. For the preparation of the dough, drinking water, treated by electrolysis with a constant electric current without the use of a diaphragm, is used.
EFFECT: invention makes it possible to improve the organoleptic properties of bread and shorten the duration of the technological process.
