SUBSTANCE: invention relates to the field of nanotechnology and the food industry. Method of obtaining chia seeds nanocapsules in guar gum is characterized by the use of guar gum as a shell of nanocapsules, and chia seed powder as the core, at the same time, seed powder is added sparingly to a suspension of guar gum in toluene, in the presence of 0.01 g of E472c as a surfactant, then stirred at 1,000 rpm, then methylene chloride is poured, after which the resulting suspension is filtered and dried at room temperature, while the core:shell mass ratio is 1:1 or 1:3.

EFFECT: method for producing chia seed nanocapsules in guar gum is proposed.
