SUBSTANCE: invention relates to a method for the production of biscuit rolls with filling. Method for the production of biscuit roll with filling characterized by the fact that a biscuit semi-finished product is prepared, whereas melange and sugar are mixed in a whipping machine, a dry flour mixture of premium wheat flour, ammonium carbonate and vanilla sugar, spinach puree with sunflower oil are added, and further mixing is carried out until a dough of a uniform consistency is obtained, followed by its formation in the form of a layer, baking at a temperature of 170°C for 20-25 minutes and aging of the finished workpiece for 15-20 minutes. A filling of cream and berry confiture for smearing is also prepared. To prepare the cream, curd cheese, 33% animal cream and powdered sugar are mixed, and a berry confiture is produced by boiling the berries with white sugar and corn starch. Next, on the layer of the biscuit semi-finished product, the berry confiture is smeared with the first layer, then the cream, after which the layer is wrapped in the form of a roll and cut into individual cakes. Biscuit roll with filling is produced with the following content of the initial components, g per 1 kg of the finished product for biscuit semi-finished product: wheat flour of the highest grade 152.0; white sugar 115.0; melange 123.0; spinach puree 152.0; sunflower oil 74.0; vanilla sugar 8.0; baking powder ammonium carbonate 8.0; for berry confiture: berries 123.0; white sugar 41.0; corn starch 8.0; for cream: curd cheese 82.0; animal cream 33% 8.0; powdered sugar 33.0.
EFFECT: invention makes it possible to obtain a finished product with increased nutritional value, reduced caloric value and improved organoleptic properties.
