FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely to the production of gelatin for food purposes from cod skin. The method for obtaining gelatin from cod skin involves washing the feedstock, grinding, processing with a proteolytic enzyme preparation (protosubtilin GZx) in an amount of 0.025% by weight of the raw material. Processing is carried out for 1 hour at a temperature from +20°C to +25°C and hydromodule 1:4. Then the raw material is washed with tap water, the water is allowed to drain, after which extraction is carried out for 3-5 hours at a temperature from +38°C to +42°C and the mass ratio of raw material:water is 1:6. The resulting extract is purified, dried, packaged and sent for storage.
EFFECT: invention allows to reduce the duration of the technological process, reduce the temperature of raw material processing, providing a finished product with a high protein content and a low ash content.
